Tuna Tabouli

1 x 95g tin Safcol Responsibly Fished Tuna in Springwater, drained 1 cup cooked brown rice 2 spring onions finely sliced Handful of chopped parsley Handful of chopped mint 2 tbsp pumpkin seeds Juice from ½ lemon 2 tablespoons olive oil or flaxseed oil Ground black pepper
Step 1 - Combine the rice, spring onion, tuna, parsley, mint, pumpkin seeds, lemon juice and oil. Step 2 - Mix through well and season with a little black pepper to taste. Enjoy.
