Tuna San Choy Bau

10 minutes| Serves 2



2 x 95g cans Safcol Responsibly fished Tuna in Springwater, drained ¼ iceberg lettuce, finely sliced 4 spring onions, sliced 1 carrot, shredded Small bunch of mint and coriander chopped 1 small diced sweet pineapple ¼ cup roasted cashew nuts Iceberg lettuce to serve Dressing: Juice from 2 limes 2 tsp honey Sesame oil
Step 1 - Combine the lettuce, spring onion, carrot, mint, coriander, pineapple, cashew nuts and Safcol Tuna. Step 2 - Toss together lightly with the combined dressing. Step 3 - Pile into lettuce leaves and enjoy.

Tips:NB: also great with a little sweet chilli drizzled over.
