Ingredients

  • 1 x 185g can Safcol Tuna in oil Italian style, drained
  • ½ cup grated tasty cheese
  • 1 medium zucchini, coarsely grated
  • 2 spring onions, very finely chopped
  • 2 tablespoons chickpea flour (besan flour), plus extra for dusting
  • for the garlic oil
  • ½ cup good quality egg mayonnaise (make sure its sugar free)
  • 1 medium garlic clove, crushed
  • 1 tablespoon lemon juice or to taste

Instructions

  1. Place the grated zucchini in a wire mesh sieve and sprinkle with a little sea salt, stir in the salt, place the sieve over a bowl, allow to drain for about 5 minutes while you make the aioli.
  2. To make the aioli, in a small bowl mix together the mayonnaise, crushed garlic, and lemon juice. Season to taste. Cover and refrigerate until ready to serve.
  3. In a medium bowl add spring onion and tuna.
  4. Use your clean hand to squeeze the grated, salted zucchini, removing as much water as possible, transfer to the bowl with the tuna. Stir in cheese, and chickpea flour. Season and stir until the mixture becomes’ sticky.
  5. Form into 8 small patties, transfer to a plate dusted with chick pea flour, dust with a little more chick pea flour and refrigerate until ready to fry. Tip: Refrigerating them for about 30 minutes helps them hold together when they’re cooking.
  6. On a medium heat in a large frying pan, add enough oil to just cover the base of the pan. Fry the patties, turning once, until golden brown.
  7. Serve hot with the garlic aioli, and a salad.
