Ingredients

  • 2 x 95g can Safcol Yellowfin Tuna Chunks Italian Style in Oil, drained
  • 2 stalks of celery, thinly sliced
  • 1 cup cooked cannellini beans, drained
  • 2 cups mixed salad leaves, washed
  • 2 spring onions, sliced
  • 2 tablespoons extra virgin olive oil
  • juice of ½ lemon
  • sea salt and freshly ground black pepper

    for the pickled radish

  • 6 radishes
  • 100ml white wine, cider or white balsamic vinegar
  • 1 teaspoon sea salt
  • 2 teaspoons white sugar

Instructions

  1. Wash and trim the radishes and slice them very thinly.
  2. Place the vinegar, salt and sugar in a small ceramic bowl and add the radish, cover and refrigerate for at least ½ hour (The longer you leave it the more pink the radish becomes, the pretty colour is from the outside skin of the radish)
  3. Once the radish has changed colour and is pink enough to your liking, drain it. In a medium bowl, add the tuna, pickle, beans and other ingredients. Dress with olive oil and lemon juice, season to taste with salt and pepper and serve immediately.
