Ingredients
- 2 x 95g can Safcol Yellowfin Tuna Chunks Italian Style in Oil, drained
- 2 stalks of celery, thinly sliced
- 1 cup cooked cannellini beans, drained
- 2 cups mixed salad leaves, washed
- 2 spring onions, sliced
- 2 tablespoons extra virgin olive oil
- juice of ½ lemon
- sea salt and freshly ground black pepper
for the pickled radish
- 6 radishes
- 100ml white wine, cider or white balsamic vinegar
- 1 teaspoon sea salt
- 2 teaspoons white sugar
Instructions
- Wash and trim the radishes and slice them very thinly.
- Place the vinegar, salt and sugar in a small ceramic bowl and add the radish, cover and refrigerate for at least ½ hour (The longer you leave it the more pink the radish becomes, the pretty colour is from the outside skin of the radish)
- Once the radish has changed colour and is pink enough to your liking, drain it. In a medium bowl, add the tuna, pickle, beans and other ingredients. Dress with olive oil and lemon juice, season to taste with salt and pepper and serve immediately.
