Tuna turmeric onion tortilla

Ingredients

  • 2 large onions, peeled and thinly sliced
  • 5 tablespoons olive oil
  • 400g waxy potatoes (like Dutch creams), scrubbed and cut very thin
  • 4 medium cloves garlic, finely chopped
  • 2 tablespoons finely grated fresh turmeric or 1 tablespoon turmeric powder
  • 2 tablespoons finely chopped flat leaves parsley
  • 1 x 185g Safcol Responsibly Fished Tuna in oil Italian Style
  • 6 large free-range eggs, beaten
  • sea salt and freshly ground black pepper

Instructions

  1. Preheat oven to 180°C.
  2. In a medium-sized frying pan on a medium-low heat, add the onions and 2 tablespoons of olive oil, cook slowly for 15-20 minutes, stirring occasionally until very soft, caramelised and dark golden brown. Remove from the pan and set aside.
  3. Add 2 tablespoons olive oil and the sliced potatoes to the onion pan, gently cook on a medium-low heat, stirring occasionally until starting to soften (about 15 minutes), add the chopped garlic, grated turmeric and two-thirds of the caramelised onions. Stir through the potatoes until well mixed. Season generously.
  4. On a low heat, add the remaining oil to a 22cm oven-proof frying pan, transfer half the turmeric potato mix to the pan, add the tuna and spread in a thin layer then top with the remaining potatoes.
  5. Pour in the beaten egg, making sure it’s distributed evenly through the potato mixture, cook on the stove top for about 3 minutes until starting to set, transfer to the oven and cook for a further 15 minutes or until golden brown and set.
  6. Serve warm garnished with the remaining onions, a green salad and a tomato or chilli relish as a light meal. Or cold as an easy snack.

Tuna turmeric onion tortilla

This tuna turmeric onion tortilla has a gorgeous golden colour and rich flavour. Above all, it’s delicious comfort food to eat all year round. The good news is both turmeric and tuna are good for you. Curcumin is the active ingredient in turmeric, and it has powerful biological properties. These may be beneficial for chronic pain and inflammation. Tuna is an excellent source of Omega 3. Win, Win.

Move over Taco Tuesday it is now tortilla Tuesday! Safcol tuna is a great replacement for red meat which when eaten in excess of over 350g a week is linked to a higher risk of some cancers. Having fish 2-3 times a week is important for a healthy heart, brain, and eye function.

B12 also plays a role in making your red blood cells. Finally, vitamin D is needed to support your immune function and is needed for proper calcium absorption in your body.

Adding to the immune boost is the onion with its antioxidant called quercetin and the antioxidant allicin in the garlic. Quercetin also helps support better blood flow in your arteries and decreases blood pressure. If you can opt for the extra virgin olive oil over the regular olive oil you will be adding not only heart-healthy monounsaturated fat but over 36 different antioxidants!

Potatoes often get a bad wrap but are full of nutrition value. Including a good source of the mineral potassium which is needed to support healthy blood pressure and folate which plays a role in DNA repair and synthesis. Turmeric is a fantastic spice to add to your diet as curcumin has strong anti-inflammatory properties and with the help of black pepper, these effects are increased as much as 2000 times!

Adding to the protein, iodine, selenium, choline, Vitamin D and B12 is the mighty egg! Eggs also add vitamin A which gives your body additional immune support and helps your eyes function at their best. It is clear to see why taco Tuesday needs to become tuna turmeric onion tortilla Tuesday!
