Ingredients

  • 2 x 95g cans Safcol Yellowfin Tuna Chunks Italian Style in Oil, drained
  • 4 multigrain tortillas
  • 2 tablespoons jalapeños in brine (optional)
  • 3 spring onions, thinly sliced
  • ½ red capsicum, deseeded and diced
  • 1 large ripe tomato, diced
  • 3 tablespoons fresh coriander, chopped
  • ½ cup cheddar or Manchego cheese, grated
  • to serve
  • sour cream
  • lemon or lime wedges

Instructions

  1. In a medium bowl, mix together the tuna, jalapenos (if you’re using them), spring onions, diced tomato, capsicum, coriander and grated cheese.
  2. Divide the mixture between the four tortillas, spreading it on half of each one.
  3. Fold the top over and toast as many as can fit at one time in your sandwich press.
  4. When they are golden and crisp, serve them with sour cream and lime wedges.
