Ingredients
- 2 x 95g cans Safcol Yellowfin Tuna Chunks Italian Style in Oil, drained
- 4 multigrain tortillas
- 2 tablespoons jalapeños in brine (optional)
- 3 spring onions, thinly sliced
- ½ red capsicum, deseeded and diced
- 1 large ripe tomato, diced
- 3 tablespoons fresh coriander, chopped
- ½ cup cheddar or Manchego cheese, grated
- to serve
- sour cream
- lemon or lime wedges
Instructions
- In a medium bowl, mix together the tuna, jalapenos (if you’re using them), spring onions, diced tomato, capsicum, coriander and grated cheese.
- Divide the mixture between the four tortillas, spreading it on half of each one.
- Fold the top over and toast as many as can fit at one time in your sandwich press.
- When they are golden and crisp, serve them with sour cream and lime wedges.
