Ingredients

  • 4 Swiss brown or shitake mushrooms, sliced
  • quarter of 1 small sweet potato, peeled and cut in ½ cm slices
  • 1 tablespoon coconut or peanut oil
  • 1 x 95g tin Safcol Tuna in Springwater
  • ½ cup cooked edame beans or green peas
  • ½ ripe avocado, sliced
  • ¼ cup bean sprouts
  • ½ cup carrot sticks

    to decorate

  • 1 small piece of Nori sheet, sliced (optional)
  • 2 teaspoons toasted sesame seeds

    for the dressing

  • 2 teaspoons sesame oil
  • 2 teaspoons soy or ponzu (citrus soy)
  • 2 teaspoons sushi vinegar

Instructions

  1. Fry the mushrooms and sweet potato in coconut oil until tender and golden brown.
  2. Mix the dressing ingredients in a small bowl.
  3. In a large flat bowl arrange the tuna, cooked mushrooms and sweet potato, peas/edame beans, avocado, bean sprouts and carrot sticks, top with nori and scatter with sesame seeds.
  4. Drizzle with dressing and serve while the mushroom and sweet potato is still slightly warm.

Poke bowls are very trendy right now but this one stands up above the rest because of the many health benefits. Mushrooms are a great source of B vitamins which are needed to allow the food you eat to be converted into energy. Sweet potato and carrots add a good dose of immune optimising vitamin C and A. Vitamin A also helps to keep your vision sharp.
