Ingredients
- 1 x 185g can Safcol Tuna in Springwater, drained
- 8 slices square sliced bread (we used white bread)
- 1 cup cooked red kidney beans
- 4 tablespoons tomato salsa (as spicy or mild as you like)
- 1½ cups grated cheese, we used a 50/50 mix of mozzarella and cheddar
- softened butter
to serve
- sour cream
Instructions
- Preheat a double jaffle iron.
- In a medium bowl, add the tuna, red kidney beans and salsa, then mix well.
- Lightly butter the bread on one side. Place the bread on a board, buttered side down. Scatter the cheese generously over the bread, then spoon on a couple of tablespoons of the tuna mix.
- Top with a little more cheese and a second slice of bread, buttered side up. Repeat with the rest of the bread and tuna mix.
- Place in the Jaffle iron, two at a time, and grill until golden. Serve piping hot with sour cream and maybe a little salad.

Tuna salsa cheese jaffles
Hands down, jaffles and toasties are the best comfort food, and our tuna salsa cheese jaffles are a little more exotic than normal, as we have added a hint of Mexico. They’re really delicious and perfect for an easy lunch, dinner or just a quick snack. And the good news… they’re easy enough for the kids to make themselves, now that’s a winner!
Jaffles are a well-known comfort food but not all are healthy for your body too.

This recipe ticks both boxes so you get the best of both worlds. Tuna is a good source of iron which supports your immune system and allows oxygen to be transported throughout your body. Tuna is also a good source of vitamin B12 which is needed to make red blood cells and tuna contains iodine which supports the health of your thyroid. Safcol tuna is a quality source which gives you good doses of heart-healthy monounsaturated fat and protein to help make and repair all the cells in your body.
Kidney beans add more iron to the meal, but the plant form of iron, non-haem iron. Good news is this form is better absorbed when paired with animal haem iron found in tuna. It is also better absorbed with vitamin C which is provided by the tomato in the salsa. Vitamin C plays other roles too like helping your immune system stay strong and is a key part of making the protein collagen.
Cheese adds delicious flavour but also calcium needed for strong bones and teeth. Calcium is important to help your muscles contract normally too. The health benefits of cheese do not stop there as it is also a good source of iodine and B12. Also, choline which supports your central nervous system and selenium which acts as an antioxidant to help fight off free radicals which can cause damage and disease to the cells of your body. When it comes to jaffles this one is a superhero.
