Ingredients
- 1 x 185g can Safcol Tuna in Springwater, drained
- 400g sweet potato, peeled, cut into 2cm cubes
- 1 cup cooked red quinoa
- 3/4 cup cooked chickpeas
- 3 spring onions, finely sliced
- 1 egg, lightly beaten
- Salt and pepper
- 1 cup fine polenta
- 2 tablespoons coconut oil or vegetable oil
Instructions
- Boil or steam the sweet potato until tender.
- In a large bowl mash the sweet potato until reasonably smooth.
- Add the cooked chickpeas and roughly mash them.
- Stir in the cooked red quinoa, sliced spring onion, egg and tuna until well mixed. Season with salt and pepper.
- Place the polenta on a large plate.
- Shape the mix into eight patties. Lightly coat in polenta and chill in the refrigerator for about 20 minutes.
- In a large frying pan on a medium heat, add the oil and fry the patties turning once until golden brown on the outside and heated through.
- Serve immediately with a salad.
