Ingredients

  • 1 x 185g can Safcol Tuna in oil Italian style, drained
  • 2 tablespoons extra virgin olive oil.
  • 2 medium garlic cloves, crushed
  • 1 cup grated mozzarella cheese
  • 6 mini roma or cherry tomatoes, sliced
  • 1 small red onion, finely sliced
  • 2 tablespoons capers, drained
  • 1 long red chilli, deseeded and diced or 1 teaspoon chilli flakes
  • 6 anchovies fillets, cut in half length ways (optional)
  • 6 sprigs fresh thyme or 1 teaspoons dried thyme leaves
  • 12 pitted black olives
  • fresh basil leaves to garnish (optional)

Instructions

  1. Preheat oven to 220°C
  2. Line a large baking tray with baking paper.
  3. Mix together the olive oil and crushed garlic.
  4. Break the tuna into small chunks.
  5. Place the pizza bases on the lined oven tray, brush with garlic flavoured olive oil.
  6. Scatter with grated mozzarella cheese.
  7. Top with sliced tomatoes, red onion, tuna chunks, the capers, anchovies fillets (if using them) and olives. Scatter with finely chopped chilli or dried chilli flakes and thyme leaves.
  8. Bake for 15 minutes or until the cheese is golden and bubbling. Serve immediately with a fresh salad.

Who doesn’t enjoy a slice of pizza? This recipe will have you coming back for a second and possibly third slice. An Italian flavoured pizza with the star ingredient Safcol tuna. This fish, as well as the anchovies, will enhance the flavour of the meal while also adding nutritional value. Tuna is a source of vitamin D, this is a fat-soluble vitamin with many roles including assisting with calcium, magnesium and phosphate absorption, to make sure that your immune system is working well and also plays a role in protein formation and cell growth. Tuna also gives your body a healthy dose of protein and omega 3 fat. This is an anti-inflammatory fat which may help reduce symptoms of rheumatoid arthritis. Omega 3 fat is also needed for normal brain, eye, artery and heart function.

The olives and the extra virgin olive oil provide healthy monounsaturated fat called oleic acid which supports normal blood cholesterol levels. Additional roles of this oil include providing an anti-inflammatory effect and promoting heart health. The extra virgin olive oil is the star oil because it also provides an additional 36 different antioxidants which help to fight off free radicals which cause damage and disease to the cells of your body. It may also help prevent several neurodegenerative diseases like Alzheimer’s Disease. Olives are a great source of vitamin E which plays an antioxidant role in your body.

Garlic and onion will help keep your immune system optimal with their potent antioxidants quercetin and allicin. Cherry tomatoes have a health-promoting antioxidant called lycopene. This may help reduce your risk of some cancers, improve heart function and for the gentlemen, support a healthy prostate. Chilli will further boost the antioxidant content and may increase your metabolism for a short period.
