Ingredients

  • 1 x 185g can Safcol Tuna in oil Italian style, drained
  • 4 large potatoes, scrubbed and baked until tender
  • 1 medium red onion, finely chopped
  • 2 tablespoons extra virgin olive oil
  • 2 medium garlic cloves, crushed
  • 1 punnet cherry tomatoes, washed
  • 16 pitted black olives (optional)
  • sea salt and freshly ground pepper
  • 2 tablespoons chopped fresh oregano leaves or 2 teaspoons dried oregano
  • ½ cup mozzarella, grated
  • ½ cup tasty cheese, grated

Instructions

  1. While the potatoes bake, in a medium frying pan on a medium heat, add the red onion and olive oil.
  2. Fry, stirring occasionally until soft and just turning colour. Add the garlic, oregano, tomatoes and juices from the can of tuna.
  3. Continue cooking, stirring occasionally until the tomatoes start to collapse and the liquid has almost totally reduced. Stir in the Safcol tuna and olives (if you use them). Season generously with salt & pepper then remove from the heat.
  4. Preheat a grill to medium-high.
  5. Cut each hot baked potato in half. Place on a grill tray.
  6. Divide the tuna and tomato mixture into 8 and spoon on top of each potato. Top with a mixture of grated tasty and mozzarella cheeses.
  7. Grill for about 5 minutes or until the cheese is melted and golden and the topping is bubbling hot. Serve hot with a fresh salad.

Jacket potatoes are a classic easy ”go-to meal”. By adding  Safcol tuna you will be enhancing this meal’s nutrition quality and taste satisfaction. Tuna is a great source of protein. This includes being a good source of fibre to keep the munchies away for a longer period. Potatoes contain folate which is needed for DNA repair and synthesis and vitamin C which supports your immune function.

Cherry tomatoes add more vitamin C as well as their unique antioxidant lycopene. For the gentlemen, this will help to keep the prostate healthy and plays a role in keeping the heart functioning well. Onions and garlic are the duo that will spring clan your immune system, as they have unique antioxidants.

If you add olives these will give your body a dose of vitamin E. This fat-soluble vitamin has an antioxidant effect in your body which helps to fight off free radicals. Olives also have a phytonutrient called oleuropein which is linked to a reduced risk of certain cancers. The extra virgin olive oil adds over 36 additional antioxidants as well, as helping your cholesterol levels. Monounsaturated fat helps to lower your ‘bad’ LDL cholesterol and promotes your ‘good’ HDL cholesterol. Healthy fats like this and the omega 3 fat found in the tuna help your body to absorb the fat-soluble vitamins A, D, E and K.

The cheeses are an essential ingredient to a jacket potato but also provide calcium to keep your muscles contracting normally, and they keep your teeth and bones strong. Cheese is also a source of iodine and selenium which help to look after the health of your thyroid. The cheeses also contain Vitamin B12 and choline which support your central nervous system function and is needed to make red blood cells. This is clearly no average jacket potato recipe.
