Ingredients
- 1 x 185g can Safcol Tuna in Springwater, drained
- 2 x pre-made Pizza bases (approx. 25-30cm)
- 2 tablespoons tomato paste
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, crushed
- 8 cherry or mini Roma tomatoes, cut in half
- 12 kalamata olives
- 1 handfuls rocket leaves, washed
- 1 cup mozzarella cheese, grated
- sea salt and freshly ground black pepper
- more extra virgin olive oil for drizzling
Instructions
- If you are making the pizza bases from scratch, make enough dough to make two 30cm bases approximately 500g of pizza dough (We have a recipe for that right <a href=”http://www.seafoodexperts.com.au/recipe-items/basic-olive-oil-pizza-dough/” target=”_blank” rel=”noopener”>here</a>) and if you are time poor buy two 25 -30cm pizza bases.
- Preheat your oven to 200°C.
- In a small bowl mix together 1 tablespoon of the olive oil, the tomato paste and garlic. Cover the bases in a thin layer of the tomato mixture and top with mozzarella then the tuna, olive, tomatoes and finish with a grind or 2 of black pepper.
- Bake for 10-15 minutes until the cheese is bubbling, golden and the bases have crisped up. Serve immediately drizzled with the remaining olive oil and a scattering of rocket leaves.
