Ingredients

  • 1 x 185g can Safcol Tuna in Springwater, drained
  • 6 large eggs, lightly beaten
  • 100g feta, crumbled
  • 1 medium zucchini, grated
  • ¼ cup basil leaves, chopped
  • 2 tablespoons basil pesto
  • sea salt and freshly ground black pepper
  • ¼ cup grated cheddar

    to decorate

  • a few basil leaves (optional)

Instructions

  1. Preheat oven to 190°C.
  2. Line a 12 hole muffin pan with patty pans or muffin cases.
  3. Grate the zucchini and sprinkle with ¼ teaspoon of salt, place in a sieve over a bowl and allow to sit for about 10 minutes so some of the water drains away. While the zucchini drains, place the crumbled feta, tuna, eggs and basil in a bowl.
  4. Use your clean hands to squeeze any extra water out of the zucchini and add to the bowl, stir to combine. Season with a little black pepper.
  5. Spoon the mixture into the 12 muffins cases, top each one with a little grated cheese and a teaspoon of pesto, then bake for about 15 minutes or until firm to the touch and golden brown on top.
  6. Eat warm or cold, perfect as a easy picnic or lunchbox treat.

Tuna feta pesto frittata

These tuna feta pesto frittata will make a delicious and very nutritious addition to any lunch box. They’re also a healthy choice for breakfast on toast, lunch with a salad or wrapped in flatbread or for dinner with steamed veggies. Tasty and easy make, frittatas are so very versatile.
