Ingredients
- 1 x 185g can Safcol Tuna in Springwater, drained
- 2 foccaccia rolls or 4 large slices of white sourdough bread
- 4 slices roast red capsicum, skinned (if short of time you can buy this in jars)
- 4 large slices mature cheddar
- 2 tablespoons of basil pesto
- 2 tablespoons olive oil
Instructions
- Preheat a sandwich press medium-hot.
- If your using rolls cut them in half, spread the bread on two sides with basil pesto. Layer the pesto bread with tuna, red capsicum slices and top with cheese.
- Top with the top of the roll or second slice of bread pesto side down.
- Lightly brush the outsides with olive oil and toast on both sides till golden and the cheese has melted. Serve hot with a fresh salad.
