Ingredients

  • 1 x 185g can Safcol Tuna in oil Italian style, drained
  • ¾ cup finely grated tasty cheddar cheese
  • ½ cup smoky barbeque sauce
  • 5 sheets filo pastry
  • 50g butter, melted
  • ½ teaspoon chilli flakes (optional)
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat oven to 200°C.
  2. In a medium bowl add the drained tuna with garlic and chilli, grated cheese, and BBQ sauce. Mix well. Check seasoning.
  3. Line a baking tray with baking paper.
  4. Unroll the filo and cover with a clean damp tea towel or chux (to stop it drying out)
  5. Cover a large chopping board with baking paper, place 1 sheet of filo on the board. Brush half (from the short side) of the sheet with melted butter. Fold in half over the buttered side. Brush with more melted butter and cut into 3 long even rectangles.
  6. Place 2 teaspoons of the tuna and cheese mixture in the bottom corner of each long rectangle of filo.
  7. Fold the pastry over the filling to form a neat triangle then fold to the opposite side then all the way to the end to make a neat triangle parcel. Place with any loose filo edges underneath on the baking tray. Repeat with the rest of the mixture.
  8. Brush the top of each tuna barbeque filo with more melted butter. Sprinkle lightly with sesame seeds and a chilli flakes, if your using them. Bake in the preheated oven, for about 12 minutes or until golden brown. Serve hot as a snack or as a light meal with a salad and some extra barbeque sauce. Makes: 15. Preparation time: 10 minutes. Cooking time: 12 minutes.
