Ingredients
- 1 avocado
- 1 x 95g can Safcol Yellowfin Tuna Chunks Italian Style in Oil, drained
- 2 tablespoons mayonnaise
- 1 tablespoon tomato ketchup
- 2 teaspoons lemon juice
- sea salt & freshly ground black pepper
- splash of Tabasco (optional)
- to serve
- 1 handful of lettuce leaves
- lemon wedges
Instructions
- Cut the avocado in half, remove the seed and scoop out the flesh. Cut the flesh into 1cm cubes. Reserve the skins. In a medium bowl, mix the mayonnaise, tomato sauce, lemon juice and Tabasco (if you’re using it), then season to taste with salt and pepper. Add the cubed avocado and tuna, stirring together gently. Return the tuna and avocado mixture to the avocado skins and plate up with a few lettuce leaves. Serve immediately.
