Ingredients

  • 1 avocado
  • 1 x 95g can Safcol Yellowfin Tuna Chunks Italian Style in Oil, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon tomato ketchup
  • 2 teaspoons lemon juice
  • sea salt & freshly ground black pepper
  • splash of Tabasco (optional)
  • to serve
  • 1 handful of lettuce leaves
  • lemon wedges

Instructions

  1. Cut the avocado in half, remove the seed and scoop out the flesh. Cut the flesh into 1cm cubes. Reserve the skins. In a medium bowl, mix the mayonnaise, tomato sauce, lemon juice and Tabasco (if you’re using it), then season to taste with salt and pepper. Add the cubed avocado and tuna, stirring together gently. Return the tuna and avocado mixture to the avocado skins and plate up with a few lettuce leaves. Serve immediately.

Tuna avocado with seafood sauce

Our tuna avocado with seafood sauce is a delicious and fresh nutrient-dense healthy lunch or hearty snack. High in protein and healthy fats, this meal will keep you going for a while.

Both tuna and avocado are full of heart-healthy fat. Tuna contains omega-3 fat, an essential fat your body needs. Avocado contains monounsaturated fat. Both fats promote healthy cholesterol levels. Both tuna and avocado are sources of vitamin E. This fat-soluble vitamin acts as an antioxidant to help fight off free radicals. Free radicals cause ageing and disease to the cells of your body when consumed in excess.

Avocado and lettuce leaves are a good source of vitamin K, needed to assist with strong bones and helps your blood to clot normally. Both are also sources of folate which allows your DNA to be made and to be repaired when damaged. Lemon juice will help keep your immune system working at its best, as a source of vitamin C.

Lettuce leaves and avocado are a good source of fibre to increase how full you feel after the meal. The healthy fats from the avocado and tuna and protein from the tuna in this meal also help you to feel fuller for longer too!
