Ingredients
- 2 x 95g tins Safcol tuna Sweet Chilli
- 2 cups cooked jasmine rice
- 1 small Lebanese eggplant, sliced
- 1 tablespoon peanut oil
- 1 large carrot, peeled cut in fine batons
- 2 bok choy, cut in half, washed
- 2 spring onions, finely sliced
to serve
- extra sweet chilli sauce
Instructions
- Brush sliced eggplant with oil and fry in a frying pan or grill pan, until tender and just cooked.
- In a steamer, cook the bok choy and carrot for about 2 minutes or until just tender.
- Divide the rice and the contents of the Safcol tuna with sweet chilli between two bowls. Cover and microwave on high for 2 minutes or until hot.
- Add the bok choy and carrot to each bowl and top with extra sweet chilli sauce and sliced spring onions.
