Ingredients

  • 2 x 95g tins Safcol tuna Sweet Chilli
  • 2 cups cooked jasmine rice
  • 1 small Lebanese eggplant, sliced
  • 1 tablespoon peanut oil
  • 1 large carrot, peeled cut in fine batons
  • 2 bok choy, cut in half, washed
  • 2 spring onions, finely sliced

    to serve

  • extra sweet chilli sauce

Instructions

  1. Brush sliced eggplant with oil and fry in a frying pan or grill pan, until tender and just cooked.
  2. In a steamer, cook the bok choy and carrot for about 2 minutes or until just tender.
  3. Divide the rice and the contents of the Safcol tuna with sweet chilli between two bowls. Cover and microwave on high for 2 minutes or until hot.
  4. Add the bok choy and carrot to each bowl and top with extra sweet chilli sauce and sliced spring onions.
