Ingredients

  • 1 x 95g can Safcol Premium Smoked Salmon, drained
  • 2 very fresh large eggs
  • 1 tablespoon white vinegar
  • 1 tablespoon olive oil
  • 10-12 asparagus spears, woody ends removed
  • 1 lemon, cut into wedges
  • for the aioli
  • 1 large egg yolk
  • 1 teaspoon lemon zest
  • ½ teaspoon minced garlic
  • 1 teaspoon Dijon mustard
  • 1 cup vegetable oil
  • ½ cup extra virgin olive oil
  • 2 teaspoons lemon juice (to taste)
  • sea salt and freshly ground black pepper

Instructions

  1. Mix the sea salt and garlic together in a mortar and pestle until creamy. Place the egg yolk, mustard, lemon zest in a bowl and whisk together, then begin to slowly drizzle the oil in, a little at a time, constantly whisking. When the sauce has thickened add the garlic and lemon juice and season with sea salt and freshly ground black pepper. If you’re short of time instead of making Aioli from scratch you can use store-bought mayonnaise and just flavour it with the garlic, mustard and lemon zest and juice.
  2. Heat the oil in a heavy skillet over a medium to high heat and add the asparagus. Cook until beginning to blister on the outside but is still holding its shape. Place the asparagus on two serving dishes and spoon the smoked salmon over the top.
  3. Whilst the asparagus is cooking, half fill a deep saucepan over a medium heat and add the vinegar. Swirl the water with a spoon before breaking the eggs into the middle, one at a time, being careful not to break the yolks. Allow to simmer for approximately 4 minutes or until the egg white has just become firm and no longer opaque. Gently remove the eggs with a slotted spoon and blot any excess water with paper towel. Sit the eggs on top of the salmon and asparagus and season with freshly ground black pepper. Serve with aioli and lemon wedges.

Smoked salmon with poached egg pan-grilled asparagus and lemon aioli

If you’re looking for some breakfast inspiration then look no further! This nutritious, healthy and delicious smoked salmon with poached egg pan-grilled asparagus and lemon aioli, is the perfect kick-start to any day! Did you know that Aioli, allioli or aïoli is a Mediterranean sauce made of garlic and olive oil; some regions use other emulsifiers such as egg. The names mean “garlic and oil” in Catalan and Provençal. It is found in the cuisines of the Mediterranean coasts of Spain, France and Italy.

Eggs are a superfood in more ways than one.

If you are bored of the same breakfast every day, this recipe is a must-try. The Safcol Premium Smoked Salmon not only adds delicious flavour but many health benefits. Including omega 3 for optimal heart and brain function. Iodine and selenium are for a healthy thyroid and normal metabolism. Eggs are a superfood in more ways than one. They have so many nutrients including vitamin D (Safcol salmon also ticks the box as a great source of vitamin D) which is needed for optimal immune function and to allow calcium to be absorbed properly in your body. Both the Safcol Premium Smoked Salmon and the eggs have choline, needed for normal brain and central nervous system function.  B12 is also found in the eggs and fish and helps your body to make red blood cells and like choline helps your central nervous system work optimally.

The white vinegar in this recipe will help lower the GI or glycaemic index of the meal. This is good for those who want a slower release of sugar into their blood.  If you want a meal which helps to optimise your immune function the allicin in the garlic as well as the vitamin C in the lemon has this role covered. The extra virgin olive oil will not only help your cholesterol levels stay in desired levels as a source of monounsaturated fat but also provides over 36 different antioxidants to help your body stay healthy.

Folate is a B vitamin needed to help your DNA repair and protect itself from damage, the asparagus in this recipe will provide this. In addition to this, asparagus is also a good dose of potassium to help your blood pressure stay in a healthy range.  This recipe is an easy way to spice up the variety in your diet and add nutrition to your body.
