Ingredients
- 2 x 95g cans Safcol Premium Smoked Salmon, drained
- 1 400g can chickpeas, drained and dried on kitchen paper
- 1 tablespoon extra virgin olive oil
- seeds of half a pomegranate
- 4 kale leaves, stem removed finely chopped
for the tamari seed crumble
- ¼ cup sunflower seeds
- 2 tablespoons sesame seeds
- 1 tablespoon low salt tamari
for the tahini lemon pomegranate dressing
- 2 teaspoons tahini
- juice and zest of half a lemon (or to taste)
- 2 tablespoons pomegranate molasses (optional)
- 1 small clove garlic, crushed
- sea salt and freshly ground black pepper
Instructions
- Preheat oven to 200°C.
- Place the drained and dried chickpeas in a single layer on a small oven tray. Drizzle with a little olive oil. Bake in the oven for about 20 minutes or until crunchy. Remove from the oven and allow to cool. In a small bowl, mix together the sunflower, sesame seeds and tamari. Place on an oven tray and bake, stirring occasionally for about 5 minutes or until the seeds are toasted and start to clump together. Remove and allow to cool.
- You can cook the tamari seed crumble and chickpeas at the same temperature and at the same time. Just don’t forget to get the seeds out after the first 5 minutes or so.
- In a small bowl or jam jar with a tight fitting lid, add all the dressing ingredients and shake or stir to combine. Season to taste.
- On your serving plates, layer up the chopped kale leaves, crunchy chickpeas, smoked salmon flakes and pomegranate seeds. Sprinkle with the tamari nut crumble. Drizzle with tahini dressing. Serve immediately.

Starting with the Safcol Premium Smoked Salmon as a great source of protein. Also, iodine and selenium for healthy thyroid function and omega 3 fat for a healthy heart and brain. Also, vitamin A for a strong immune system and additionally helps keep your eyes functioning optimally as well as vitamin K to allow your blood to clot normally.
