Ingredients
- 2 x 95g cans Safcol smoked salmon, drained
- 750g baby chat or kipfler potatoes, scrubbed and cut in bit sized pieces
- 75g rocket leaves, washed
- ½ cup torn basil leaves (optional)
- 4 spring onions, sliced
- 3 tablespoons basil pesto
- 2 tablespoons extra virgin olive oil
- Juice from ½ large lemon or to taste
- sea salt and freshly ground black pepper
Instructions
- Boil the potatoes for about 15 minutes or until tender, drain and allow to cool slightly.
- In a small bowl whisk together the pesto, olive oil and lemon juice and season generously.
- Place the potatoes, ½ the spring onions, rocket and basil leaves into a large bowl. Pour in the dressing and stir till the potatoes and leaves are all coated with dressing, finally, fold in the smoked salmon flakes. Transfer to a serving plate and sprinkle with the remaining spring onions. Serve immediately or chill in the fridge and serve later. Serves: 4. Preparation time: 15 minutes. Cooking time: 15 minutes.
