Ingredients
- 2 x 95g cans Safcol smoked salmon, drained
- 2 hard boiled eggs, peeled and sliced
- 140g pot spreadable cream cheese
- 2 tablespoons finely chopped fresh dill
- juice and grated zest ½ large lemon
- 2 spring onions, finely sliced
- 2 cups rocket leaves, washed
- sea salt and freshly ground black pepper
- 2 multi grain muffins, split and toasted
Instructions
- In a small bowl mix together the spreadable cream cheese, chopped dill, juice and zest of ½ a lemon, season to taste with salt and pepper.
- Spread the dill and lemon cream cheese generously with on the toasted muffins. Top with the rocket leaves, sliced hard boiled egg, and Safcol smoked salmon. Scatter with sliced spring onions.

As a fattier fish it helps to keep your brain working well and your cholesterol levels in a healthier ratio. This means more ‘good’ HDL cholesterol to ‘bad’ LDL cholesterol. Salmon is also a great source of protein and a good source of iron.
