Ingredients
- 8 thin slices brown bread (we used low carb bread with loads of nuts and seeds)
- 1 x 95g can Safcol Premium Smoked Salmon, drained
- 5 spears asparagus, woody ends trimmed
- ½ Lebanese cucumber, finely diced
- 2 spring onions, out leaves removed finely sliced
- 4 tablespoons low fat spreadable cream cheese
- sea salt and freshly ground black pepper
- 1 small pinch cayenne pepper (optional)
Instructions
- Bring a pan of water to a fast boil and add the asparagus. Cook for 1-2 minutes only or until they turn bright green. Remove from the pan and plunge into cold water. (They should be only just cooked)
- Add the cucumber to a small bowl and very lightly salt it, allow to sit for a couple of minutes.
- Using a medium bowl add the cream cheese and stir till smooth, season with pepper.
- Drain and dry the asparagus using kitchen paper. Cut in1cm slices, add to the cream cheese.
- Drain off any water that comes out of the salted cucumber and dry it as much as you can, add to the cream cheese.
- Fold the asparagus, cucumber and drained salmon into the cream cheese and check the seasoning.
- Lay out 4 slices of the bread and spread the mixture thickly on each slice. Top with the remaining bread slices and cut into triangles. (You can remove the crusts if it’s for a special occasion) serve immediately or cover, chill and serve within 2 hours.
