Ingredients
- 1 tbsp extra virgin olive oil
- 1 onion, finely chopped
- 1 stick celery, finely chopped
- ¼ tsp chilli flakes
- ½ punnet cherry tomatoes, halved
- 1 tbsp tomato paste
- ½ cup of white wine
- 1 can of 85g can smoked mussels in oil
- Pinch curry powder
- 250g large pasta shells
- 3 sprigs of parsley, stalks and leaves finely chopped
Instructions
- Bring a large pot of salted water to the boil.
- Heat oil and a tablespoon of the oil from the can of mussels over a medium heat. Add the onion, celery and garlic and cook for 5 minutes to soften with little colour. Add the cherry tomatoes and pastes and cook for a minute before deglazing with wine. Boil for a minute then add the mussels and curry powder.
- Add pasta to boiling water and cook until just al dente.
- Add pasta to the mussel ragu along with some of the cooking water and parsley, toss to coat and serve.
