Simple tuna Mediterranean pasta

Ingredients

  • 200g of your favourite pasta
  • 3 tablespoons extra virgin olive oil
  • ½ cup, diced capsicum
  • 2 medium sized garlic cloves, finely chopped
  • 8 cherry or mini Roma tomatoes sliced
  • 1 x 185g tin Safcol tuna in oil – Italian style
  • 2 tablespoons olives
  • sea salt and freshly ground black pepper

    to serve – optional

  • 2 tablespoons roughly torn basil leaves

Instructions

  1. Cook the pasta following the pack instructions for al dente. Drain and reserve a little of the cooking water.
  2. In the same pan the pasta was cooked in, on a medium low heat, add the olive oil and capsicum.
  3. Cook, stirring constantly for about one minute until the capsicum softens slightly.
  4. Add the garlic, cook for another 15 seconds or until fragrant.
  5. Stir in the tomatoes, olives and the Safcol Responsibly Fished Tuna in oil Italian Style. Cook for another 30 seconds.
  6. Add the hot pasta, and if needed, add a little of the pasta cooking water to ‘loosen’ the sauce. Season to taste.
  7. Divide between 2 serving bowls and scatter with basil leaves. Serve piping hot.

When selecting your favourite pasta I recommend going for a whole grain variety to increase the nutrients your body will receive. This includes B vitamins as well as more fibre to help keep you fuller for longer and promote a healthy weight.

The extra virgin olive oil is by far the healthiest oil around with a fantastic array of health benefits as monounsaturated fat. This helps your cholesterol composition favour a healthy type with more HDL-Cholesterol and lower LDL-cholesterol. On top of this extra virgin olive oil has polyphenols which act as antioxidants and help to keep your body healthy.

The vitamin C in the capsicum and tomatoes will help to keep your immune system strong. Vitamin C is also a component needed to make collagen, so it assists in keeping your skin youthful too. Tomato is also a great source of lycopene needed for a healthy heart and prostate.
