Ingredients

  • 350g of fresh linguine
  • 3 tbsp olive oil
  • 1 French shallot, finely chopped
  • 2 cloves garlic, chopped
  • 2 tbsp baby capers, drained
  • 2 tsp Sicilian chilli paste (or any chilli of your choice)
  • 1 tbsp tomato paste
  • 1 x 185g can Safcol No Net Tuna in Springwater 185g, drained
  • 6 kalamata, pitted
  • 3 sprigs of basil, leaves picked and torn
  • Zest of 1 lemon
  • ¾ cup Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to the boil.
  2. Heat a large pan on medium heat and add the oil. Sweat off the shallots for a minute then add the garlic, followed by the capers, chilli, and tomato paste. Swirl the pan to fry off for a minute then add the tuna and olives.
  3. Cook pasta as per packet instructions.
  4. Add the pasta and a ladleful of the cooking water. Toss then add the basil, lemon zest, parmesan. Check seasoning and serve.
