Ingredients
- 350g of fresh linguine
- 3 tbsp olive oil
- 1 French shallot, finely chopped
- 2 cloves garlic, chopped
- 2 tbsp baby capers, drained
- 2 tsp Sicilian chilli paste (or any chilli of your choice)
- 1 tbsp tomato paste
- 1 x 185g can Safcol No Net Tuna in Springwater 185g, drained
- 6 kalamata, pitted
- 3 sprigs of basil, leaves picked and torn
- Zest of 1 lemon
- ¾ cup Parmesan cheese
- Salt and pepper, to taste
Instructions
- Bring a large pot of salted water to the boil.
- Heat a large pan on medium heat and add the oil. Sweat off the shallots for a minute then add the garlic, followed by the capers, chilli, and tomato paste. Swirl the pan to fry off for a minute then add the tuna and olives.
- Cook pasta as per packet instructions.
- Add the pasta and a ladleful of the cooking water. Toss then add the basil, lemon zest, parmesan. Check seasoning and serve.
