Ingredients
- 1 x 110g Safcol Brisling Sardines Springwater
- for the vinaigrette
- ½ small red onion, very finely diced
- 1 red chilli, deseeded finely diced
- 3 tablespoons sherry or red wine vinegar
- 3 tablespoons extra virgin olive oil
- 1 teaspoon Dijon mustard
- sea salt and freshly ground black pepper
- to server
- 3 tablespoons finely chopped chives or spring onions
- 4 tablespoons spreadable cream cheese
- 4 slices warm sourdough toast
Instructions
- In a small jar or bowl add all the vinaigrette ingredients and combine. Season to taste.
- Spread the cream cheese on the sourdough toast, arrange about 3 sardines on each slice drizzle with the red onion vinaigrette and decorate with chopped chives or spring onions.
- Serve immediately.
