Ingredients
- 1 x 200g can Safcol Salmon in Springwater, drained
- 1 medium red onion, peeled and finely sliced
- 1kg potatoes, peeled and finely sliced
- 1 400g can crushed tomatoes
- 2 tablespoons parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon Tabasco (optional)
- ½ cup tasty cheese, grated
- 25g butter, cut into small pieces
- sea salt and freshly ground black pepper
Instructions
- Preheat oven to 180°C.
- In a large bowl mix the salmon with two thirds of the sliced potato, onion, tomato, herbs, Tabasco (if your using it) and season generously with salt and pepper.
- Pile into a ovenproof dish and arrange the rest of the sliced potato in a overlapping pattern on top. Scatter the butter over the top layer of potatoes and finish with grated cheese and freshly ground black pepper.
- Bake in the oven for 50-60 minutes until the potato is tender and the topping golden. Serve hot with a green salad. <br><b>TIP</b> Adding a little chilli, as we have in this recipe, enhances the flavours of all the other ingredients. Increase the quantity added if you prefer a spicier dish.
