Ingredients

  • 1 x 200g can Safcol Salmon in Springwater, drained
  • 1 cup frozen baby peas
  • 2 cups grated zucchini (from about 2 medium zucchini)
  • 4 spring onions finely sliced
  • 4 tablespoons besan or chickpea flour
  • 1 egg
  • 2 heaped teaspoons ground turmeric
  • sea salt and freshly ground pepper
  • 1 tablespoon coconut oilto serve
  • lemon wedges

Instructions

  1. Defrost the peas in warm water for about 2 minutes and drain them. In a large bowl combine all the ingredients apart from the salmon and coconut oil. Stir well to combine. Add the drained salmon and stir gently. Season to taste.
  2. Heat a large frying pan on a medium heat add the coconut oil and heaped tablespoons of the salmon and vegetable mix.
  3. Push the mixture into neat rounds with an egg flip and fry for about 3-4 minutes turning once until golden brown. Serve piping hot with a green of mixed salad.

Onions will pump up your immune system with their antioxidant called quercetin. All the vegetables included in this recipe will help your blood pressure stay in a healthy range as sources of potassium. The spice turmeric will add a delicious taste to the fritters but also adds health benefits such as anti-inflammatory and antibacterial properties. By adding the black pepper, you can better absorb and use the health benefits of curcumin which is the main compound in turmeric by up to 2,000%!
