Ingredients
- 1 x 200g can Safcol Salmon in Springwater, drained
- 1 x 95g can Safcol Salmon in Springwater, drained
- 1 tablespoon gelatin powder
- 2 teaspoon lemon juice
- 1 vegetable stock cube
- ¼ cup mayonnaise
- ½ cup cream
- ½ cup hot water
- to serve
- pickled cucumbers
- crackers
Instructions
- Using an electric blender, combine gelatin, hot water and stock cube. Blitz for a couple of minutes. Add all other ingredients including the water from the Safcol can, blend for another minute until smooth.
- In a lightly greased mold, pour the mixture and allow to set in the fridge.
- Gently coax the sides of the mousse from the mold. Turn out the mousse onto a serving plate and accompany with pickled cucumbers and crackers.
