Salmon love heart frittatas

Ingredients

  • 1 x 200g can Safcol Salmon in Springwater, drained and flaked
  • 500g waxy potatoes, boiled and cut in 2-3 cm cubes
  • 2 tablespoons extra virgin olive
  • 1 medium garlic clove, crushed
  • 25g butter
  • 1 cup frozen or fresh peas, cooked
  • 2 tablespoons fresh basil leaves, finely chopped
  • sea salt and freshly ground black pepper
  • 10 large free-range eggs, beaten
  • ½ cup tasty cheese, finely grated
  • ½ punnet cherry tomatoes, sliced

    You will also need

  • large heart shaped cookie cutters

Instructions

  1. Preheat the oven to 200°C.
  2. In a large (about 30cm) ovenproof sauté or frying pan on medium-high, add the olive oil and cubes of cooked potato. Sauté, stirring occasionally until the potato starts to turn golden, then stir in the crushed garlic and cook for 1 more minute, until it smells fragrant. Remove from the pan and drain on absorbent kitchen paper.
  3. In a large (about 30cm) ovenproof sauté or frying pan on medium-high, add the olive oil and cubes of cooked potato. Sauté, stirring occasionally until the potato starts to turn golden, then stir in the crushed garlic and cook for 1 more minute, until it smells fragrant. Remove from the pan and drain on absorbent kitchen paper.
  4. On a medium high heat, using the same pan you cooked the potatoes in, add the butter and heat until it starts to foam. Pour in the salmon, potato, egg and pea mix. Use a spoon to make sure all the ingredients are evenly spread round the pan. Scatter with grated cheese and top with sliced cherry tomatoes. (You can pop these on so they will fit the heart shaped cutters like we did). Transfer the pan to the oven and cook for just long enough for the egg to be set and the cheese topping to start to brown (about 15-20 minutes). Remove from the heat, allow to set and cool in the pan. Once the frittata is cool enough to handle, carefully cut the heart shapes out and transfer to your serving plates. (Reserve the offcuts to eat later)
  5. When you ready to serve that special breakfast or lunch. Reheat the salmon love hearts frittatas in the microwave for about 1-2 minutes until just warmed through, serve with a salad and maybe a special glass of bubbles.

Surprise your Valentine with these cute salmon love heart frittatas. They are easy to make, plus if you want you can make them in advance and just heat to eat for that romantic breakfast for two. Serve with bubbles and love!

There are two parts which make up omega 3 fat in salmon called DHA and EPA. The DHA part of omega 3 fat structure in salmon is the main type of fat needed in the retina of your eye.  So, omega 3 is an important part of maintaining healthy vision.  Omega 3 fat may also help reduce insulin resistance which is important for normal blood sugar levels in your body. Also, this amazing fat has been shown to reduce the effects of aging on your brain which can lead to mental decline and diseases like Alzheimer’s disease.

The crushed garlic will pump up your immune system due to a compound called allicin. The peas and potatoes will also help, giving your body a good dose of vitamin C. The cherry tomatoes will make sure your heart and prostate stay healthy with an antioxidant called lycopene. All these vegetables will support healthy blood pressure as they all contain potassium.

The eggs provide a great range of nutritional benefits including vitamin A for healthy vision and immune support, vitamin D to allow calcium to be absorbed properly in your body and iodine and selenium for optimal thyroid function, just to name a few. The cheese will add to the iodine and selenium content to support a healthy metabolism. Cheese also will help to keep your bones and teeth strong with a good dose of calcium.
