Ingredients

  • 1 x 95g Safcol Premium Salmon Soy & Ginger , drained
  • 1 tablespoon sushi seasoning
  • 1 tablespoon Japanese preserved ginger
  • ½ small Lebanese cucumber, halved long ways and sliced
  • 1 small carrot, peeled and cut in ribbons lengthways
  • ½ cup cooked sushi or brown rice
  • 4 small radishes, washed trimmed and cut in quarters
  • ½ tablespoon lightly toasted sesame seeds
  • 2 tablespoons cooked peas or edame beans
  • to serve
  • Japanese soy sauce
  • Japanese mayonnaise (optional)

Instructions

  1. In a small bowl mix the rice and sushi seasoning adding more or less to taste.
  2. Place the seasoned rice in the center of a low sided serving bowl or plate and arrange the other ingredients including the Safcol Salmon Soy and Ginger decoratively around the rice.
  3. Serve immediately and serve chilled.

Our Salmon ginger poke bowl is light, fresh and full of delicious Japanese inspired umami flavours. It makes a totally scrumptious everyday lunch or dinner treat for you or if you double the quantities you and your partner or a friend.

Poke bowls are all the rage but not all are considered a healthy choice. This one is definitely trendy and IS good for your health. Salmon is a great source of omega 3 fat which is classed as a polyunsaturated fat. This type of fat is your body’s friend and helps your cholesterol levels stay in healthy ranges. It also plays a role in skin, eye, heart, artery, and brain health and is an essential fat for your body.

Ginger is useful for adding flavour but is known for its ability to reduce symptoms of nausea and can help soothe your stomach. Sesame seeds and edamame will provide plant source of calcium to the meal to help keep your bones strong and muscles contracting normally.

All the vegetables will help your blood pressure stay in a healthy range as sources of potassium. Carrot will help your vision stay sharp as well as support a normal functioning immune system as a source of vitamin A. All the vegetables also provide your body with fibre to help your gut stay healthy and keep you feeling fuller for longer. If you select brown rice this will further pump up the fibre content. Brown rice also provides several vitamins and minerals your body needs for normal function and health. This is a poke bowl which will help tick many nutrition boxes your body needs for health while satisfying your taste buds at the same time.
