Ingredients

  • 2 smoked chorizo sausages, sliced
  • 1 x 200g can Safcol Salmon in Springwater, drained
  • 8 eggs, lightly beaten
  • 6 wholegrain taco wraps
  • spray olive oil
  • 2 peeled roast red peppers (from a jar), cut in strips
  • ½ cup tasty cheese, grated
  • sea salt and freshly ground pepper
  • 1 teaspoon Tabasco (optional)

Instructions

  1. Preheat oven to 170°C.
  2. In a frypan, on a medium heat, fry the sliced chorizo until golden brown. Drain on absorbent kitchen paper. Microwave the wraps for a few seconds to soften them and make them easier to work with. Oil each pan on a 6 hole, 10cm muffin pan or 6 10-12cm ramekins. Line with the softened wraps to form a cup.
  3. Half fill each wrap with a mixture of flaked Safcol Salmon, red pepper strips, and cooked chorizo. Season the beaten eggs and whisk thoroughly. Ladle the egg evenly between the 6 filled wraps. Top each with a little grated cheese. Cover with baking paper and foil, this will stop the wraps cooking too fast and and bake for about 20 minutes or until the egg is set and the tops are golden brown.
