Ingredients

  • ½ avocado, diced
  • Zest and juice of ¼ lemon
  • 1 tbsp white onion or shallot, finely diced
  • 1 tbsp Dijon mustard
  • 1 ½ tbsp mayonnaise
  • 1 ½ tbsp Greek yoghurt
  • 400g or 2 x 200g can Safcol Salmon in Springwater, drained
  • 200g store-bought blinis*
  • Thai basil, to garnish
  • Coriander, to garnish
  • Salt

Instructions

  1. Place the diced avocado into a bowl.
  2. Add a pinch of salt and use a fork to mash it up until smooth.
  3. Add lemon zest and juice, onion, mustard, mayonnaise and Greek yoghurt, and stir until smooth.
  4. Drain salmon, discard the liquid and add to the bowl. Use a fork to break up the salmon and stir everything together.
  5. Warm blinis in a pan and place on a plate.
  6. Using two teaspoons quenelle the salmon mixture and place on top of a warm blini. Garnish with the herbs and serve.

Salmon Blinis

Salmon Blinis – a canape with a difference. You could prepare these morish canapes before your soiree and assemble them when you need them, alternatively, like Justine Schoefield, you can easily make them away from your kitchen, making them ideal for a treat if you’re caravanning or camping in the warmer parts of the country. Either way, these tasty canapes are perfect for any occasion with your favourite cool beverage!

A great meal to start to any morning. The avocado is a delicious fruit which not only provides your body with healthy monounsaturated fat which helps to keep your cholesterol in healthy levels of more ‘good’ HDL cholesterol and less ‘bad’ LDL cholesterol and triglycerides. Avocado is also a great source of potassium which helps to maintain healthy blood pressure.

Adding to the healthy fats for a healthy cholesterol ratio is the delicious Safcol Salmon in Springwater. It provides a great source of omega 3 fat which also plays other roles and is an important part of keeping your brain and heart-healthy as well as keeping your arteries working optimally. The red or pink colour is due to the antioxidant called astaxanthin which helps to lower your ‘bad’ LDL cholesterol and raise your ‘good’ HDL cholesterol. Salmon

The lemon juice adds zest but also a good kick of vitamin C for immune support. The immune factor is enhanced due to a factor found in the onion called quercetin. The coriander and basil are great ways to add flavour to this meal but also contain smaller amounts of vitamins and minerals like vitamin K needed for healthy bones and to allow blood to clot normally in your body.

Tips

Blini pancakes topped with smoked salmon, make a delicious special occasion breakfast. Just make the pancakes in a larger size and allow 2-3 per person. Blinis can also be made in advance and heated in the microwave just before serving.
