Salmon baked wraps with leek and Jarlsberg

Ingredients

  • 1 x 200g can Safcol Salmon in Springwater, drained
  • 1 large leek, washed and sliced finely
  • 1 tablespoon extra virgin olive oil
  • sea salt freshly ground black pepper
  • ½ cup Jarlsberg cheese, grated
  • ½ cup tasty cheese, grated
  • 6 wholegrain wraps, we used chia

Instructions

  1. Preheat oven to 180°C.
  2. In a large frying pan, on medium-low heat, add olive oil and cook the leeks for a couple of minutes, stirring occasionally. Turn the heat to low, cover with a lid and cook until soft but not browned. Remove from the heat, add the Safcol smoked salmon and the tasty grated cheese season to taste with sea salt and a little pepper.
  3. Take the wraps out of the pack and place on a plate covered with cling film. Warm very gently for about 15 seconds, on the defrost setting of your microwave – this will make the wraps softer and easier to fold.
  4. Take the cling off the wraps and working fast place 2 small tablespoons of the leek and salmon mixture on one half of each wrap. Fold in half and then again in quarters, place on a large baking tray. Repeat with the remaining wraps.
  5. Sprinkle with the grated Jarlsberg cheese. Bake in the oven for about 12 minutes or until the cheese melts and the wraps turn golden and crisp. Serve immediately.
