Ingredients
- 500g large pasta shells of your choice
- for the stuffing
- 1 x 200g can Safcol Salmon in Springwater, drained
- 150g ricotta
- 100g smooth feta
- ½ red onion, finely diced
- 100g baby spinach leaves, wilted, excess water squeezed out and roughly chopped
- ½ teaspoon lemon zest
- 1 egg
- ½ teaspoon freshly ground black pepper
- for the sauce
- 1 tablespoon olive oil
- ½ red onion finely diced
- 1 garlic clove, minced
- 800ml passata
- ½ cup basil leaves, torn
- ⅓ cup Parmesan
- sea salt and freshly ground pepper
Instructions
- Preheat oven to 180°C.
- In a medium saucepan, bring water to boil, add pasta and a pinch of salt and cook until just al dente (still firm to the bite). Drain well and place as many pasta shells as you need in a single layer on a plate. Place them in the fridge until you’re ready to stuff.
- Combine all of the ingredients for the stuffing in a bowl and mix well. Using a teaspoon, stuff the pasta shells with the salmon mixture and return to the plate in a single layer.
- In a large shallow oven-proof pan or saute pan, heat the oil and add the onion. Gently fry until soft. Add the garlic for a further 30 seconds or until it smells fragrant.
- Add the passata and stir through, simmer for a further 10 minutes on medium heat, season with salt and pepper and add half of the basil.
- Add the stuffed pasta (stuffing side up) to the sauce, being careful to not cover with the tomato sauce.
- Scatter the parmesan over and put in the oven for approximately 15-20 minutes or until the cheese starts to turn golden brown. Garnish with the remainder of the basil and serve immediately.
