Ingredients

  • 1 x 200g can Safcol Salmon in Springwater, drained
  • 2 sheets of premade butter puff pastry
  • 2 hard boiled eggs peeled and finely sliced
  • 1 medium onion finely diced
  • 1 cup cooked long grain or basmati rice cooked in chicken or fish stock
  • 1 cup button mushrooms sliced
  • ½ cup chopped flat leaved parsley
  • 1 tablespoon of chopped fresh dill (optional)
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 50g butter
  • sea salt and freshly ground black pepper

    …for the glaze

  • 1 beaten egg

Instructions

  1. Preheat the oven to 180°C
  2. In a large heavy bottomed frying or sauté pan, melt the butter and sauté the onion and mushrooms until soft and just changing colour.
  3. Add all the other ingredients (apart from the egg glaze) and mix well, season to taste and allow to cool for 10 to 15 minutes.
  4. Lay one sheet of the pastry on a baking tray lined with baking paper. Pile the salmon filling in the centre, wipe a little water on the edges and then top with the second sheet.
  5. Crimp the edges of the pastry well to hold the pie together.
  6. Brush the pie with the egg glaze. Slash the top and bake for 20-25 minutes until the pastry is crisp and golden.
  7. Serve with sour cream and salad or steamed green vegetables.

Russian fish pie – Coulibiac

This version of a classic Russian fish pie uses ingredients most of us have in our pantry and fridge all the time. It’s a really tasty pie and super easy to make.

A coulibiac is a type of Russian Pirog usually filled with salmon or sturgeon, rice or buckwheat, hard-boiled eggs, mushrooms, onions, and dill. The pie is baked in a pastry shell, usually of brioche or puff pastry. The dish was so popular in Russia in the early part of the 20th century that Auguste Escoffier, the famed French chef, brought it to France and included recipes for it in his masterwork, The Complete Guide to the Art of Modern Cookery. A classic grand coulibiac features several fillings, often a mixture of some white fish and rice for the top and bottom layers with fillets of sturgeon or salmon between. The most unusual ingredient commonly included in the grand version of the dish is vesiga, the spinal marrow of the sturgeon.

Coulibiac is also made with simpler, vegetarian fillings like cabbage or potatoes.

Mushrooms are a great source of B vitamins; this includes riboflavin which helps the production of hormones. Parsley and dill give your body more antioxidants to help fight off free radicals. They are both good sources of vitamin C, potassium, iron, vitamin A and magnesium. Magnesium helps to keep both your muscles and nerves functioning normally as well as being involved in over 300 different biochemical reactions. You don’t have to miss out on indulgence if you want to look after the health of your body.
