Ingredients
- for the pancake batter
- 1⅔ cups rice flour (available in the Asian section of your supermarket)
- 1 cup coconut cream
- 2 spring onions, very finely sliced
- 1½ cups water
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- vegetable oil to fry
for the filling
- 1 x 185g can Safcol Tuna in Springwater, drained
- 3 spring onions, very finely sliced
- 1 cup coriander leaves
- 2 red bird’s-eye or bullet chillies, thinly sliced (optional)
- 3 cups beans sprouts
to serve
- sweet chilli sauce or chilli jam
- extra coriander leaves
- iceberg lettuce leaves (optional)
Instructions
- In a bowl, combine rice flour, coconut cream, turmeric, spring onion and salt with the water. Stir until a smooth batter forms. Cover and set aside in a cool place to rest for an hour.
- In a large non-stick frying pan, over medium-high heat lightly brush with vegetable oil, then add ½ cup batter, swirling the pan around to form a thin pancake. Cook for 2-3 minutes or until just cooked through. Scatter half of the pancake with one-eighth of the tuna, coriander, chillies, and bean sprouts. Flip pancake in half to cover filling and cook for a further 30 seconds to warm through, then remove with a spatula and place on a serving plate. Repeat with remaining batter and filling ingredients. Serve with chilli sauce or jam, extra herbs and wrap in lettuce leaves, if desired.
