Ingredients
- 1 x 185g can Safcol Tuna in oil Italian style, drained
- 500g spiral pasta, (or your favourite pasta)
- 3 tablespoons extra virgin olive oil
- 3 medium cloves garlic, crushed
- 1 small red onion, finely sliced
- 1 punnet cherry tomatoes, halved
- 2 red bullet chillis, deseeded and finely chopped (add more if you like spicy food)
- 1 cup flat leaf parsley, roughly chopped
- sea salt and freshly ground black pepper
Instructions
- Cook the pasta ‘al dente’ according to the instructions on the pack. Drain and reserve around half a cup of the cooking water.
- In a large saucepan, on a medium heat, add oil and then the onion, fry for 2-3 minutes or until it begins to soften. Add the garlic, cook for about 30 seconds or until fragrant.
- Stir in hot cooked pasta, tuna with the can liquid, parsley and tomatoes to the pan and stir through until well combined.
- Pour in a little of the reserved pasta cooking water until the pasta is glossy but not too wet.
- Season with sea salt and freshly ground black pepper and serve piping hot.
