Ingredients

  • 1 tin of Safcol Brisling Sardines in Springwater
  • 200g mashed potatoes
  • 1/2 cup chopped parsley (flat or frilly leaf parsley works well)
  • 1 large or 2 small shallots, finely diced
  • 1 egg
  • 1/4 tsp salt
  • Oil for deep frying

Instructions

  1. In a mixing bowl, gently break up sardines, and then add the remaining ingredients and mix to combine.
  2. Place in the fridge for 30 minutes to chill and firm up.
  3. Heat a pot with 3cm-deep oil on low heat.
  4. When the oil is ready for frying, scoop out 2tsp of the fritter mix and shape it into a ball. Gently drop the fritter into the oil. Repeat with remaining fritter mix.
  5. Fry until golden brown.
  6. Serve as finger food, or with salad for a light meal.

Tips for good fritters: Don’t be scared of oil. Make sure you add enough to the pan, as it will help to give crispiness, good colour and delicious flavour to the fritters.
Let it sizzle! Your pan needs to be properly heated up before cooking. If the fritter doesn’t sizzle when it hits the pan, you know it’s not ready!
Don’t overcrowd the pan, as this causes the temperature of the pan to drop, resulting in limp, under-cooked fritters.
