Ingredients

  • 1 x 185g can Safcol Tuna in Springwater, drained
  • 8 cherry tomatoes, sliced
  • a handful of mixed salad leaves, washed
  • fresh chervil leaves (optional)
  • 4 slices whole grain sourdough bread
  • thousand island dressing
  • 4 tablespoons, mayonnaise
  • 2 tablespoons tomato ketchup
  • 2 small pickled gherkin, very finely chopped
  • 2 teaspoons Worcestershire sauce
  • 4-6 drops Tabasco (optional)
  • sea salt and freshly cracked pepper to taste

Instructions

  1. In a small bowl, mix the dressing ingredients and season to taste.
  2. Spread a little of the thousand Island dressing on the bread, pile on the salad leaves, drained tuna and sliced cherry tomatoes.
  3. Drizzle with the remaining dressing and serve with masses of napkins.
