Ingredients

  • 1 x 185g can Safcol Tuna in Springwater, drained
  • 4 thick slices of sourdough bread
  • 1 tablespoon butter
  • 3 tablespoons quality whole-egg mayonnaise
  • 1 celery stick including leaves, finely diced and leaves chopped roughly
  • 1 tablespoon dill pickles, chopped
  • 1 teaspoon Dijon mustard
  • 2 spring onions, finely sliced
  • sea salt and freshly ground black pepper
  • 1 cup tasty cheese, grated

Instructions

  1. In a medium-sized bowl combine the tuna, mayonnaise, celery, pickles, mustard, spring onions and salt and pepper in a bowl and stir until well mixed. Cover with cling wrap and put in fridge until ready to use.
  2. Butter both sides of the bread and place on a hot skillet and fry until golden brown on both sides. Spoon a generous amount of the tuna mixture on to each slice of bread and cover with grated cheese. Cover grill plate with aluminium foil and place the filled toasts on top. Grill under a high heat until the cheese melts and browns. Serve immediately with a side of whole pickles.

This melt can be classified as comfort food with health benefits included. Sourdough bread made in the traditional method is classified as a wholegrain.
