Ingredients
- 1 x 185g can Safcol Tuna in Springwater, drained
- 1 cup cooked corn kernels
- ½ cup red capsicum, diced
- 1 spring onion, very finely sliced (keep a few slices to decorate)
- 1 stick celery, finely sliced
- 2 tablespoons good quality mayonnaise
- sea salt and black pepper,freshly ground
- 4 thick slices wholegrain bread
Instructions
- In a medium bowl, mix the tuna with the vegetables, add the mayo and season to taste.
- Toast the bread. Pile the tuna and vegetable mix on top of each slice of toast and scatter with a few extra slices of spring onion and serve immediately.
