Ingredients

  • 2 x Safcol Squid in Olive Oil 111g cans
  • 200g spaghetti
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 3 cherry tomatoes, sliced
  • 1 long red chilli deseeded
  • ½ cup finely chopped parsely leaves
  • ½ lemon, zest and juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta following the pack instructions Drain and set aside.
  2. In a medium pan, add olive oil, chopped garlic, and chilli. Heat until fragrant.
  3. Add the squid and can juices, heating gently.
  4. Stir in the drained pasta, parsley, cherry tomatoes, lemon juice, and zest.
  5. Season to taste and serve piping hot with a fresh salad.
