Ingredients
- 2 large potatoes, scrubbed
- 1 x 185g can Safcol Tuna in Springwater, drained
- ½ cup cooked corn kernels
- 2 spring onions thinly sliced
- 25g butter
- ¼ cup milk
- 1 tablespoon sour cream
- ½ cup grated cheddar cheese
- sea salt and freshly ground black pepper
to serve - the green part of 1 spring onion thinly sliced
Instructions
- Preheat the oven to 200°C.
- Bake the potatoes, until tender and cooked through, about 45 minutes to one hour (depending on the size of your potatoes) If you short of time you can cook the potatoes in a microwave and pop them in the oven for a short time to crispen up.
- Allow the potatoes to cool enough so you can handle them safely. Cut them in half, length ways, scoop out all the flesh ( reserve the skins) and transfer to a large heat proof bowl or pan. Mash the potato with the milk, butter and sour cream. Season to taste with salt and pepper. Stir in the corn, sliced spring onion and drained Safcol tuna.
- Pile the tuna and potato filling back in the potato skins and top with grated cheese. Bake in the hot oven for about 15 minutes until the filling is piping hot and the cheese is melted and golden. Serve hot with a green salad.
