Crispy tuna vegetable tart with a brown rice crust

Ingredients

  • 1 x 185g can Safcol Tuna in Springwater, drained and flaked
  • 1½ cups cooked brown rice
  • 7 eggs
  • ½ cup of flat leafed parsley finely chopped
  • 1 dessertspoon of fresh chopped oregano (or 1 teaspoon dried oregano)
  • ½ dessertspoon of fresh chopped thyme (or ½ teaspoon dried thyme)
  • 1 medium onion finely diced
  • 1 large garlic clove crushed
  • ½ small sweet potato grated
  • 1 small zucchini grated
  • 1 tablespoon olive oil
  • 1½ cups of grated tasty Cheddar cheese
  • sea salt and freshly ground black pepper
  • spray oil

Instructions

  1. Set oven at 180°C
  2. Using a medium heavy bottomed frying pan add oil and cook the onion over a moderate heat until transparent and just starting to change colour, add the garlic and cook for another minute or until fragrant remove from heat and allow to cool slightly.
  3. In a large bowl add the cooked rice ½ cup cheese and one egg, and mix really well then add salt and pepper to taste and mix again. Spray a large flan dish (approx. 30cm) with spray oil, and press the rice mix up the bottom and sides of the dish to form a crust. Don’t worry if it’s a bit crumbly and there are small gaps as these will fill when you add the egg mix.
  4. Using the same bowl (to save on washing up!) add 6 of the eggs beaten, the cooked onion and garlic, herbs, flaked tuna, grated vegetables and ½ a cup of the cheese. Mix together.
  5. Top the rice crust lined dish with the egg and veggie mixture and sprinkle with the remaining ½ cup of cheese. Bake in the oven for approximately 45 min or until the egg mix is cooked through and the rice crust is golden and crisp. Serve warm with a salad or cold for picnics. Serves 4 to 6.
