Ingredients
- 1 x 185g can Safcol Tuna in Springwater, drained and flaked
- 1½ cups cooked brown rice
- 7 eggs
- ½ cup of flat leafed parsley finely chopped
- 1 dessertspoon of fresh chopped oregano (or 1 teaspoon dried oregano)
- ½ dessertspoon of fresh chopped thyme (or ½ teaspoon dried thyme)
- 1 medium onion finely diced
- 1 large garlic clove crushed
- ½ small sweet potato grated
- 1 small zucchini grated
- 1 tablespoon olive oil
- 1½ cups of grated tasty Cheddar cheese
- sea salt and freshly ground black pepper
- spray oil
Instructions
- Set oven at 180°C
- Using a medium heavy bottomed frying pan add oil and cook the onion over a moderate heat until transparent and just starting to change colour, add the garlic and cook for another minute or until fragrant remove from heat and allow to cool slightly.
- In a large bowl add the cooked rice ½ cup cheese and one egg, and mix really well then add salt and pepper to taste and mix again. Spray a large flan dish (approx. 30cm) with spray oil, and press the rice mix up the bottom and sides of the dish to form a crust. Don’t worry if it’s a bit crumbly and there are small gaps as these will fill when you add the egg mix.
- Using the same bowl (to save on washing up!) add 6 of the eggs beaten, the cooked onion and garlic, herbs, flaked tuna, grated vegetables and ½ a cup of the cheese. Mix together.
- Top the rice crust lined dish with the egg and veggie mixture and sprinkle with the remaining ½ cup of cheese. Bake in the oven for approximately 45 min or until the egg mix is cooked through and the rice crust is golden and crisp. Serve warm with a salad or cold for picnics. Serves 4 to 6.
