Ingredients
- 1 medium head broccoli, cut in small pieces and florets
- 1 x 200g can Safcol Salmon in Springwater, drained
- 150g feta, crumbled
- 4 spring onions, finely sliced
- 10 large free range eggs, beaten
- ½ cup cream
- sea salt and freshly ground black pepper
- ¾ cup grated cheddar
Instructions
- Preheat oven to 190°C
- Grease or line with patty pans a 12 hole muffin pan.
- Divide the salmon, broccoli, feta and two thirds of the spring onion between the pans.
- In a jug, whisk together the eggs and cream. Season generously.
- Half fill each pan with the egg mix to give it a chance to trickle to the bottom of the pans and then top up with the rest.
- Top each frittata with a little grated cheese and a sprinkle of sliced spring onions.
- Bake for 20-25 minutes or until set and golden brown. Serve warm or cold.
