Ingredients
- 2 rounded, ripe but firm avocados, cut in half with the stone removed
- 1 x 95g can Safcol Salmon in Springwater, drained
- 3 tablespoons spreadable cream cheese
- 1 teaspoon lemon juice
- sea salt and freshly ground black pepper
- a few drops Tabasco (optional)
- 1 medium ripe tomato, sliced
- ½ small red onion, finely sliced (optional)
- 1 handful salad leaves, washed
- 1 teaspoon toasted sesame seeds
to serve - 2 bamboo skewers
Instructions
- In a small bowl, mix together the cream cheese, lemon juice and Tabasco if you’re using it, and drained Safcol salmon. Season to taste with salt and pepper.
- Just before serving, using a large serving spoon, scoop the avocado flesh out of the skin. Cut a shallow slice off the two round side of avocado halves you want to sit on the bottom of your avocado ‘buns’ (this will help it stand upright)
- Place the sliced avocado halves on two serving plates fill with salad leaves, tomato slices and finally the salmon and mayonnaise mixture. Top with the other avocado half. Secure with a bamboo skewer and scatter lightly with toasted sesame seeds.
- Serve immediately. Serves: 2. Preparation time: 10 minutes.

This Avocado salmon salad ‘burger’ looks great and is a novel way of eating a salmon and avocado salad. Plus it is low carb, and full of protein and makes for a healthy lunch.

A burger like this does not need to be a sometimes food. Did you know that avocado has more potassium than a banana? Potassium is a mineral which helps to keep your blood pressure in the healthy range. Avocado is also a good source of healthy monounsaturated fat. Monounsaturated fat helps to keep your cholesterol balanced and more towards the ‘healthy’ HDL cholesterol and less ‘bad’ LDL cholesterol and triglycerides.
Even better news is Safcol salmon which will help your cholesterol being rich in heart-healthy omega-3 fat. Omega 3 fat is an essential fat needed for your brain and heart to function optimally. It is also an anti-inflammatory fat which may help reduce the symptoms associated with rheumatoid arthritis. Salmon is also a good source of protein and vitamins and minerals. Some highlights are B12 and choline, needed for normal central nervous system function and vitamin D for a strong immune system. Finally, iodine and selenium to help your thyroid work optimally.
Cream cheese is full of calcium which helps strengthen your bones and teeth. Calcium also plays other roles like helping the muscles in your body contract normally. Sesame seeds are a good plant source of calcium too but also add B vitamins and fibre for a healthy gut.
The range of vegetables adds more fibre and potassium to the burger. The vegetables each have their own unique antioxidants which help fight off free radicals, which can cause damage and disease to the cells of your body. Lemon is a good source of vitamin C which keeps your immune system working optimally and helps make collagen needed for strong ligaments, tendons, and youthful-looking skin. Tomato is full of the antioxidant lycopene which helps keep your heart working well and may protect your body against some cancers. Red onion will help your immune system further because it contains the antioxidant quercetin. The salad leaves contain many vitamins like vitamin K to help your blood clot normally, vitamin A for a healthy working immune system and support of your eyesight.
